If you want better coffee at home, skip the fancy machine and buy a grinder. Whole beans ground right before brewing taste noticeably brighter than pre-ground coffee, and the right grinder makes the rest of the process almost foolproof.
Burr, not blade
Blade grinders chop beans with a spinning propeller, so you end up with a mix of dust and chunks. The dust over-extracts and turns bitter while the chunks under-extract and taste sour, all in the same cup. A burr grinder crushes beans between two ridged surfaces set a fixed distance apart, which produces particles of a much more even size. Even particles extract evenly, and even extraction is what makes coffee taste balanced.
What to look for
- Conical burrs. Entry-level conical burr grinders are quiet, forgiving and easy to clean.
- Plenty of steps. Look for a wide range of settings, from fine enough for a moka pot to coarse enough for cold brew.
- Low retention. Some grounds always stay inside the machine. The less that hides there, the fresher each cup will be.
- Removable burrs. You should be able to lift the top burr out with your fingers for cleaning.
Grind size by method
- Espresso: very fine, close to powdered sugar.
- Moka pot and AeroPress: fine, a little coarser than espresso.
- Pour-over and drip: medium, like coarse sand.
- French press: coarse, like sea salt.
- Cold brew: extra coarse, like cracked pepper.
Adjust by taste
Start in the middle of the recommended range for your method and taste the result. If the cup is sour, thin or finishes fast, grind finer. If it is bitter, harsh or drying, grind coarser. Change one step at a time and keep the dose the same, and within a few mornings you will know exactly where your dial belongs.
Keep it clean
Coffee oils go stale and can make fresh beans taste flat. Once every week or two, run the grinder empty, lift out the top burr and brush away the old grounds. Never wash the burrs with water unless the maker says it is safe, since moisture can cause rust.
A good grinder will not make you a coffee expert overnight, but it will make you sound like one.
